2017 Coombsville Cabernet Sauvignon

$60.00

The 2017 is 100 percent Cabernet Sauvignon coming from a vineyard just 1/2 mile from the winery. It is dense yet elegant, with aromatics of cedar, cassis, black cherry, and tobacco. Tasting great now, this wine should continue to age gracefully for many years to come.

Vineyard
This Cabernet Sauvignon hails from a small vineyard less than a mile from the winery. Meticulously farmed, the one-acre lot produces low yields and highly concentrated fruit. The soil consists of alluvial deposits and volcanic ash. Typical of the Coombsville AVA, the fruit matures slowly, reaching phenological ripeness with the retention of bright acidity.

Winemaking
After a hand harvest, we crushed the fruit into open top fermenters, where it underwent a two-week fermentation, with twice daily punchdowns. At dryness, we pressed in a traditional vertical basket press, and aged the wine in a mix of once and twice used barrels. The wine was racked two to three times a year during elevage and bottled unfined and unfiltered.

Winemaker’s Notes
The 2017 Cabernet has dark cherry, cassis, cedar, and tobacco on the nose, with chewy tannins, and a lengthy finish. Extra aging on this wine helped integrate the tannins and the result is a wine that is impeccably balanced. This wine is drinking great now and will last for many years in the cellar.
